If you're looking for a good weekend appetiser or a bar-themed snack, you've come to the right place! These are very crispy but without the task of deep-frying or covering them in oil. Don't worry, I love fried food too, but it's always nice to have a little bit of a healthier option.
The spices and herbs that go on the frosted flake crumbs add such a good taste that the dipping sauces are a more than satisfying - and maybe addictive - combo. They're family-approved (we tried these out last night) so try these out for a fun snack with your friends, family, kids for a appetiser night!
Serves: 6
Prep time: 20 min
Cook time: 15 min
Chicken Nuggets:
4 medium-sized chicken breasts
3 1/2 cups frosted flakes
1 tbsp paprika
1 1/2 tsp basil
1 1/2 tsp oregano
2 tsp garlic powder
Salt & pepper to taste
1/2 tsp seasoning salt
3 eggs
3/4 cup flour or cornstarch
Directions:
Put the frosted flakes into a large ziploc bag or into a food processor and crush until their in small crumbs. If using a ziploc bag, place the frosted flakes in the bag and seal. Then, crush the flakes with the measuring cup or a glass (whatever you have handy).
Place the crushed crumbs on a large deep plate or dish. Then, add the paprika, garlic powder, basil, oregano, seasoning salt, and salt and pepper and combine with the crumbs.
Crack the eggs into a small bowl and whisk together well. Then, place the flour in another bowl.
Cut the chicken breasts into 1 or 1 1/2-inch squares.
Bread the chicken: first, roll through the flour, then the eggs, and then the crumb mixture. Ensure that the chicken is fully covered with each ingredient. Repeat the process with each nugget.
Place the nuggets on an oiled and foil-covered sheet pan. You may have to use two pans.
Bake for 15 minutes until crispy. Dip in some honey mustard or spicy mayo and enjoy!
See below for dipping sauce ingredients!
Honey Mustard:
1/2 cup mayo or miracle whip (whatever you have)
2 tbsp honey
2 tbsp mustard
1 tsp dried dill
1/2 tsp paprika
Salt and pepper, to taste
Smokey Spicy Mayo:
1/2 cup mayo or miracle whip
1 1/2 tsp of red pepper jelly (this is hard to find so you can substitute this with 1 1/2 tsp of a 1:1 ratio of barbecue sauce and any jelly you have)
2 tsp Sriracha or hot sauce
Notes:
These can be made gluten free with plain corn flakes and you can still get the same sweetness of the frosted flakes by adding a tsp sugar to the crumb mixture.
You can also make this egg-free by substituting the eggs with milk (any kind of milk), yogurt, oil or melted butter. Anything that can coat the flour and make the crumb mixture stick.
If you want to make dairy and egg-free sauces, I would suggest having a sweet chilli sauce to dip these in.
This recipe came just in time to have with your family or friends (if you're in Saskatchewan). We're finally allowed to get together with some close households so you know I had to share these with my family this weekend. Try these out if you're getting together with some loved ones, they won't disappoint! Just a tip: enjoy them with a your favourite cold beer, there's not much that beats it especially on a Friday or Saturday night.
If you try these out, let me know and be sure to send me a picture or post it and tag me!
Thanks for reading! Have a great weekend! :)
