Brownie Baked Oatmeal
Serves: 9
Prep time: 15 minutes
Cook time: 50 minutes
Ingredients
3 bananas or 1 cup unsweetened apple sauce
â…“ cup maple syrup or honey
2 eggs
1 teaspoon vanilla extract
¼ cup oil
2 ½ cups milk
2 cups quick oats
2 scoops protein powder
½ cup flour
¾ cup cocoa powder
2 teaspoons baking powder
½ teaspoon salt
½ cup walnuts (optional)
¼ cup chocolate chips
Directions
Preheat to 350°F and grease and line a 9x13-inch baking dish.
In a large mixing bowl or stand mixer, mash the bananas. Then, add the maple syrup, eggs, vanilla extract, and oil and whisk into the mashed bananas. Then, add the milk and gently whisk into the mixture.
Add the dry ingredients (oats, protein powder, flour, cocoa powder, baking powder, salt) and mix into the wet ingredients.
Lastly, add the nuts and chocolate chips and fold into the mixture.
Pour the mixture in baking dish and bake for about 50 minutes or until a toothpick poked inot the center comes out clean. Let cool for 10 minutes before enjoying. Top with yogurt and berries for a complete meal and enjoy!
