Bruschetta Camembert

It's May Long weekend and like every May Long, the weather isn't great. If you went to the lake or planned a holiday, I hope you're enjoying it so far! I'm pretty jealous of you. Today, I'm sharing an appetiser or snack that would be perfect for this weekend. It has fresh ingredients, perfect for spring, but can be a comforting and warm snack on a chilly day like today.


This has the classic ingredients of bruschetta but it's less focused on the bread and more on the cheese which I think most people can get on board with (although I love bread too). The nothing beats a buttery melted cheese with fresh tomatoes, onions, and parsley and a splash of olive oil and balsamic vinegar too. Yum!


Serves: 6-8

Prep time: 10 min

Cook time: 20 min


Ingredients

1 medium-size wheel of camembert cheese

1/2 heirloom tomato, chopped

1/4 medium red onion, diced

Handful of parsley, chopped (can be substituted with basil)

1/2 tbsp olive oil

1 tbsp balsamic vinegar

1/2 tsp sugar

Salt & pepper


Directions

  1. Preheat oven to 350.

  2. Chop the tomato, onions, and parsley.

  3. Unwrap the cheese and place in an oven-safe bowl or small casserole dish. Add the tomatoes, onions, parsley, balsamic vinegar, oil, sugar, and salt and pepper.

  4. Cook uncovered for around 20 minutes or when the cheese is soft the you press on the outside. This also depends on how melted you want it - I cooked it a bit longer).

  5. Serve immediately with crackers or baguette bread.


How colourful and tasty does that look? It tastes just as good as it looks. If you're a fan of Brie, you'll definitely like this. the Camembert cheese is quite similar to Brie.


Brie and red pepper jelly is a very popular snack with a lot of people in my life so I wanted to add a little more variety to snack options.
