Happy Thursday everyone! One of my main goals with this blog is to share everyday recipes that add a little something different to the regulars and hopefully inspire you to do the same. Because we all get a littleno bored of our same menu. These drumsticks are one of the ways that I tried to shake things up a little.
These drumsticks have, as the title says, garlic and soy sauce, but I also added a bit of herbs, a mild spice, and a little sweetness with some honey and red pepper jelly. You can either marinade these overnight or get them in the sauce right before you pop them in the oven and you'll still have a great addition to your meal.
Serves: 5-6
Prep time: 10 min
Cook time: 1 hr
Ingredients:
1-1 1/2 kg of chicken drumsticks (about 10)
1/3 cup low sodium soy sauce
3 tbsp honey
3 tbsp red pepper jelly
3 cloves garlic, crushed
1 tsp paprika
1 tsp basil
Salt and pepper, to taste
1 1/2 tbsp of hot sauce
Directions (For overnight marinade):
Stir together the ingredients for the sauce.
Place the drumsticks and marinade in a large ziploc bag or a large container that's large enough for the drumsticks to not overlap and sit in the marinade. Let sit for up to 24 hours in the fridge.
When you're ready to cook it, heat the oven to 375 and place the drumstick in a large casserole dish. When the oven is heated, place in the oven to cook.
When the drumsticks have been cooking for 30 minutes, take out of the oven and flip the drumsticks to the other side ensuring both sides cook in the herb marinade.,, ofon
Let cook for another 30 minutes and take out when done (at an internal temp of 165 and there's not pink on the meat at the bones).
Serve immediately. Enjoy!

Notes:
For marinating right before cooking, still mix the sauce in a small bowl and put the chicken and marinade in the ziplock bag. Seal the bag, making sure there's no air in the bag. Then, toss the bag around a little to ensure the marinade gets all over the chicken. Lay the bag on a flat surface and massage the marinade into the chicken for about 2 minutes. Then cook as directed in the directions above.
This flavour of chicken is so easy to make a meal with because it has all the flavour that you can just add some vegetables or a mild pasta/rice and you're set!
You can also put these in the slow cooker and they'll turn out just as good (maybe even better!)
These are so simple to make and worth adding to a family meal. Or, hopefully you can take a couple ideas from this to add to your drumstick recipe to change up the flavour a bit. If you don't have a go-to for chicken drumsticks, this one is a great contender! Also, if you don't usually stray away from the classic chicken breasts, then I suggest trying drumsticks out here and there. They're cheaper and they're pretty hard to mess up, as long as you cook them for long enough!
