Gingerbread Loaf with Lemon Icing
Serves: 1 loaf, about 10 slices

Cook time: 1 hr, 15 minutes
Ingredients
¾ cup unsalted butter, melted and cooled
½ cup brown sugar
¼ cup granulated sugar
2 large eggs, room temperature
½ cup milk
⅓ cup plain greek yogurt
¼ cup molasses
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 baking soda
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon ground cloves
1 tablespoon lemon zest, for topping
Lemon Icing
1½ cups powdered sugar
1 tablespoon lemon juice
1 tablespoon milk or cream
1 tablespoon butter, melted
pinch of salt
1 teaspoon vanilla extract
Directions
Preheat oven to 350°F and grease and line a loaf pan with parchment paper.
In a large bowl, cream the butter and brown sugars together. Add the eggs and vanilla and cream together. Add the greek yogurt, milk, and molasses and mix until combined.
Add the dry ingredients to the liquid mixture, and whisk until just combined and no patches of flour remain. Pour the batter into the loaf pan and spread to level out.
Bake for about 1 hour and 15 minutes, or until the centre is fully set and a knife/toothpick inserted comes out clean.
Place the pan on a cooling rack and let cool for at least 1 hour before enjoying.
Meanwhile, make the icing in a small bowl and drizzle over the cake. It may take a few minutes for the icing to set. Slice and enjoy!
