Hi again! Lately I've wanted to share an all-in-one supper recipe to let you cook and leave all the thinking to me! Sometimes there are just those days when you need to put food on the table in the easiest way possible with ingredients you don't have to make an extra trip to the grocery store for. This grilled chicken sandwich and sweet potato wedges with homemade ranch is that recipe that will save you on those days!
Serves: 4
Prep time: 20 min
Cook time: 25 min
Grilled Chicken Burger
4 burger buns
2 medium-sized chicken breasts
1 tsp cayenne pepper
1 1/2 tsp paprika
1 tsp thyme
Salt & pepper
1 tbsp oil
Juice of half a lemon
1 heirloom tomato, sliced
1/2 avocado, sliced
2/3 cup cabbage, sliced or coleslaw, or lettuce
Homemade ranch (see below)
Sweet Potato Wedges
2 medium sweet potatoes
1 tbsp oil
1 1/2 garlic powder
1/2 tsp seasoning salt
Salt & pepper
Directions
Preheat oven to 425. Cut the sweet potatoes into wedges with or without peeling. I leave the skin on to make them more crispy. Place onto a sheet pan and coat in the rest of the ingredients. Cook for 22-25 minutes, flipping them halfway.
Bring a skillet to medium heat. cut the chicken breasts in half (parallel to the cutting board) so you have thinner chicken pieces. season with the cayenne, paprika, and thyme. Place in the pan with 1 tbsp of oil and the lemon juice and cook each side for 3-4 minutes, once the chicken it a bit charred.
Meanwhile, prepare tomato, avocado, and ranch dressing.
When there are 3 minutes left for cooking the wedges, place the buns in the oven to toast.
Assemble your burgers and enjoy! Be sure to make a little extra ranch to dip your wedges in!
Homemade Ranch Dressing
6 tbsp sour cream
4 tbsp mayonaise
1/4 cup chopped chives or green onions
Salt & pepper
1 tsp sugar
