Grilled Mediterranean Vegetables

Happy Thursday everyone!


I hope you've had a great week so far and a great weekend coming! I have a great summer recipe today for you all that I just cooked up and wish I would've tried sooner in the summer. Nevertheless, you have to try these Grilled Mediterranean Vegetables.


This recipe includes some of my favourite vegetables tossed in oil, dried herbs, grilled on the barbecue and tossed in fresh herbs, parmesan, and a little bit of balsamic vinegar. Some of my favourite flavours all in one dish.



Serves: 4

Prep time: 10 min

Cook time: 15-20 min


Ingredients

2 bell peppers

1 beefsteak tomato or 4 on-the-vine tomatoes

1 medium eggplant

2 tbsp oil

1/2 tsp dried basil

1/2 tsp dried oregano

1 tsp garlic powder or fresh garlic

1 tbsp balsamic vinegar

1 tbsp parmesan (substitute with feta)

handful fresh basil

handful fresh parsley

1 baguette (optional)


Directions

  1. Start up your barbecue to medium-high heat. Meanwhile, slice your peppers and tomatoes into wedges and the eggplant into 1/2 cm thick slices.

  2. Toss all your vegetables into a large bowl with the oil and dried herbs and garlic.

  3. Place the vegetables on to the barbecue and let cook for 5-6 mins. After that, check the tomatoes and based on your desired softness/warmth of tomatoes, you may want to take them off at this point. Let the other vegetables cook for another 5 minutes.

  4. Remove the vegetables and place back into the bowl you used before and toss with the vinegar and fresh herbs.

  5. If having a baguette with, slice the bread and lay flat on a sheet pan. Drizzle with extra oil (optional) and broil for 1-2 minutes. Watch them closely so they don't burn!



Appetizer: enjoy the veggies with the baguette to make for a great appetizer

Meal: add your favourite meat and utilise your already warm barbecue to cook you meat with the vegetables! Enjoy with the baguette on the side.



This is the perfect recipe to enjoy with friend in the last few weeks of summer as an appetiser as is, a vegetable side, or a full meal with meat added to it.
