Halloween Monster Cookie Bars

These gooey chewy Halloween Monster Cookie Bars are the perfect way to use up your leftover Halloween candy in the most delicious way.

With a classic monster cookie base packed with melty chocolate chips, peanut and caramel-stuffed chocolate bars, and crunchy Smarties/M&Ms, these bars are chewy, delicious, and irresistible. Whether you (somehow) have leftover Halloween candy, or just bought some post-Halloween clearance candy, these are a great way to get creative and enjoy it in a fun way!


This recipe is quick and easy, so these bars come together in no time. Plus, you can customize them with your favourite mix-ins like mini marshmallows, dark chocolate, or any of your favourite Halloween candy! Let's get into it.

Halloween Monster Cookie Bars


Yield: 9 blondies
Prep time: 10 minutes
Cook time: 20-25 minutes

Ingredients


  • ½ cup butter, room temperature

  • 1 cup brown sugar

  • 1 egg, room temperature

  • 2 teaspoons vanilla extract

  • 1 cup all-purpose flour

  • 1 cup old-fashioned oats

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon salt

  • ½ cup chocolate chips

  • 1 cup roughly chopped Halloween candy bars (I used Kit Kat, Snickers, Smarties, and Mars)


Directions

  1. Preheat to 350°F and grease and line an 8x8-inch pan with parchment paper.

  2. In a large bowl, cream the butter and brown sugar. Add the egg and mix until light and fluffy. Then, add your vanilla extract and combine into the mixture.

  3. Add the flour, oats, baking soda, baking powder, and salt to the bowl and fold into the wet ingredients until just combined. Lastly, add the chocolate chips and chopped candy bars to the mixture and fold in, saving ¼ cup for topping.

  4. Spread the dough evenly in the lined pan and lightly press the remaining chopped candy bars into the dough. Bake for 20-25 minutes, or until the edges are golden brown and the middle is still a bit gooey.

  5. Remove from the oven and set the pan on a baking rack for 30 minutes to cool. Carefully pull the blondies out by grabbing the parchment paper underneath and place on a cutting board. Cut into 9 equal squares and enjoy!
