This is a very easy but yummy weeknight supper that has minimal prep! The herbs, spices, and lemon add so much flavour to white fish fillets and any kind of potatoes you have!
Serves: 4
Prep time: 5 minutes
Cook time: 45 minutes
Fish & potatoes:
2 basa fillets*
3 cups potatoes, any kind
1 lemon
Marinade:
4 cloves garlic
4 Tbsp oil
2 Tbsp lemon juice
2 tsp paprika
2 tsp dried basil (or 2tbsp fresh)
2 tbsp fresh oregano (or 2 tsp dried)
Directions:
1. Preheat oven to 350.
2. Make the marinade. Pour half the marinade onto the fish. Set aside.
3. Cut potatoes into roughly 1” squares. Toss in a bowl with other half the marinade. Slice half the lemon and add to sheet pan with potatoes. Put in the oven and cook for 15 minutes.
4. Make room on the sheet pan and add fish. Cook for 30 more minutes.
5. Remove from oven and serve immediately.
Some notes about the recipe:
If you want to add veggies to this, totally feel free to add anything; just make sure you have enough room on the sheet pan to allow all ingredients to cook properly. (I cooked mine separately because I ran out room!). Additionally, just be sure to adjust the marinade amount because, trust me, you don't want to miss out! It's so yummy!
You can use any kind of white fish fillets for this. I used basa for a couple reasons. First, it has a very mild taste, making it very easy to season with whatever your desire. Second, basa fillets are a very protein rich fish with minimal fat. Lastly, it is one of the cheapest forms of protein you can find in the grocery store (bonus!). I usually just buy a bag of frozen fillets and they come in handy pretty often.
Tip: Make sure you have a Pinot Gris/Pinot Grigio on hand when you have this! The pairing will not disappoint.
