Kodiak Cakes Apple Cinnamon Muffins

Sweetened with maple syrup and based on Kodiak pancake mix, these moist Apple Cinnamon Protein Muffins are the perfect protein snack to add to your workday.

I'm a BIG snacker and find that I need multiple balanced snacks throughout my day to keep me going. These muffins are the perfect snack that fit into my criteria of being balanced, keep me full, and are delicious (the most important one)!


The reason why these muffins a higher in protein than normal recipes is that I used the Kodiak Cakes Power Cakes Mix from Costco. It has more protein in the mix than regular pancakes and if you spread some peanut butter on top when eating, even better! Of course, this mix makes great pancakes but I love using it in other baking and breakfast recipes.


The Kodiak Cakes mix is a regular item at Costco so you should be able to find it at any Costco. If you order online, you can get it here.



Kodiak Cakes Apple Cinnamon Muffins

Servings: 12 muffins

Prep time: 10 min

Cook time: 15-22 min


Ingredients

  • 2 cups apple, grated

  • 1/2 cup maple syrup

  • 2 eggs

  • 1 rip banana, mashed or 2/3 cup applesauce

  • 2 tsp vanilla

  • 2 cups Kodiak Cokes Power Cakes Flapjack and Waffle Mix

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1/2 tsp salt

  • Nuts (optional)


Directions


  1. Preheat your oven to 350 degrees F and spray muffin tin or fill with muffins liners.

  2. In a large bowl, combine the shredded apple, maple syrup, eggs, banana, and vanilla.

  3. In small bowl, combine the cake mix, baking soda, baking powder, cinnamon, and salt. Then, add to the wet ingredients and combine.

  4. Divide the batter evenly between 12 muffin tins. Bake for 15-22 minutes (depending on your oven) until a toothpick comes out clean.

  5. Let cool for a few minutes before removing from the the muffin tin and placing on the cooling rack.

  6. Enjoy!
