Oatmeal Dark Chocolate Cookies

Soft & Chewy Oatmeal Dark Chocolate Cookies that are the perfect all-around treat.

Oh yes, my mom's oatmeal cookie recipe. There is almost nothing as comforting. My mom makes these with half milk chocolate and half raisins (controversial in my family) but I decided to switch it up and add some dark chocolate chunks.


These are really easy to whip up and always end up being fluffy, soft, and chewy. All the best things in a cookie.

Oatmeal Dark Chocolate Cookies


Yield: 16-18 cookies
Prep time: 10 minutes
Cook time: 12-15 minutes


Ingredients

  • ¾ cup unsalted butter, room temperature

  • ¾ cup brown sugar

  • ½ cup white sugar

  • 1 egg, room temperature

  • 2 tablespoons water

  • 2 teaspoons vanilla extract

  • ¾ cup cup all-purpose flour

  • 1 teaspoon cinnamon

  • ¾ teaspoon baking soda

  • 3 cups rolled oats

  • 1 cup dark baking chocolate, roughly chopped


Directions

  1. Preheat to 350°F and line 2 baking sheets with parchment paper.

  2. Cream together the butter and sugars.

  3. Add the egg, vanilla, water, and mix well.

  4. Add the flour, cinnamon, baking soda, and rolled oats. Mix until just combined. Add the chocolate and combine.

  5. Using a cookie scoop or your hands, scoop 2 tablespoons of cookie dough onto the cookie sheet at a time until dough is gone. Roll into balls and spread out. I like to have about 6-8 cookies on each cookie sheet.

  6. Bake for 12-15 minutes or until the cookies have slightly golden edges. Remove the cookies from the oven and set them on a baking rack for 10 minutes. Serve them right after or store them in an airtight container for up to 1 week.


Feel free to switch up the chocolate for your favourite nuts, dried fruit or other chocolate and enjoy!
