Orange Loaf with Cream Cheese Icing

My orange loaf with cream cheese icing is such a fun snack to bake. It's easy, so refreshing, and the perfect sweet treat!

In the spring, I always like to add citrus to any of my recipes when possible. It really just matches my mood to the beautiful warm weather! Although I made this in the spring, I think anything citrus can be enjoyed in any season. So please, enjoy this in winter or summer!


This loaf is so easy! the loaf itself isn't too sweet with the citrus, but with the added cream cheese icing, the flavour is a great balance.

Orange Loaf with Cream Cheese Icing


Ingredients

  • ½ cup oil

  • ¾ cup sugar

  • 1 large egg, room temperature

  • 1 teaspoon pure vanilla extract

  • 1 tablespoon orange zest

  • ½ cup freshly squeezed orange juice

  • ¾ cup milk

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons baking powder

  • ½ teaspoon salt

Cream Cheese Icing

  • ½ cup butter, unsalted

  • 4 oz cream cheese

  • 1 teaspoon vanilla

  • ½ teaspoon salt

  • 3 cups icing sugar

Directions

  1. Preheat your oven to 325 degrees F. Grease a large loaf pan or line with parchment (2 strips laid criss-cross to cover the inside of the pan - making it easier to pick the loaf up out of the pan).

  2. In a medium bowl, cream the oil and sugar. Add the eggs and vanilla and cream together with a whisk.

  3. Add the orange zest, juice, and milk and combine.

  4. Then, add the flour, baking soda, baking powder, and salt. Fold in to the wet ingredients with a rubber spatula.

  5. Pour the batter into the loaf pan and bake for 45-50 minutes, when a toothpick comes out clean. Let cool on a cooling rack for at least an hour, don't cut into it yet!

  6. While the loaf bakes, whisk together the butter and cream cheese for the icing. This works best with a stand or hand mixer.

  7. Then, add the vanilla and salt and combine. Then, add the icing/confectioner's sugar one cup at a time and cream.

  8. When the loaf cools, spread the icing over the top, slice, and enjoy!
