Ingredients
2 tablespoons butter, softened
2 tablespoons brown sugar
2 tablespoons granulated sugar
1 egg yolk
⅛ teaspoon vanilla extract
¼ teaspoon red food colouring
1 ½ tablespoons cocoa powder
¼ cup flour
⅛ teaspoon baking soda
½ teaspoon salt
1 ½ tablespoons cream cheese, cut into ½-inch cubes
1 ½ tablespoons white chocolate chips
Directions
Preheat to 350°F and line a baking sheet with parchment paper.
In a medium bowl, cream the butter and sugars. Add the egg yolk and vanilla extract and mix until light and fluffy. Then add the red food colouring and mix until completely distributed into the dough.
Add the flour, cocoa powder, baking soda, and salt and mix until just combined. Add the cream cheese cubes and the white chocolate chips and stir until just distributed into the dough, you don't want to over mix or the cream cheese won't stay in small chunks in the dough.
Split to dough into two cookies, roll into balls, and place on the baking sheet. Bake for 12-14 minutes or until the cookies start to have slightly crispy edges and are still a bit gooey inside.
Remove the cookies from the oven, allowing them to settle on the baking sheet for 5 minutes, and then set them on a baking rack for 10 minutes. Serve them right after or store them in an airtight container in the refrigerator for up to 5 days.
