Rhubarb Rosé French 75

A prairie twist on a classic: French 75 with Sparkling Rosé and lightly sweetened with homemade rhubarb syrup. This happy hour cocktail is so refreshing.

I love putting my own twist on all the classics (which you should know by now) and this one did not disappoint. If you've never had a French 75, it's made with gin, lemon juice, simple syrup, and champagne. Sounds refreshing, doesn't it?


Well this version adds a fruity component to the classic with homemade rhubarb syrup and topped up with sparkling rosé. This summery cocktail deserves a place on your happy hour list to try. Let's get into it!

Rhubarb Rosé French 75


Serves: 1 drink
Prep time: 5 minutes
Cook time: 10 minutes


Ingredients

  • 1-1.5 ounces dry gin

  • 0.5 ounce rhubarb syrup (see below)

  • 0.5 lemon juice

  • handful of ice cubes

  • 2-3 ounces sparkling rosé

  • rhubarb shavings, for garnish


Rhubarb Syrup

  • 1/2 cup rhubarb

  • 1/4 cup water

  • 2-3 tablespoons honey or maple syrup (see directions below)

Make 4-5 ounces of syrup


Directions

  1. In a jar or cocktail shaker, add the gin, rhubarb syrup, lemon juice, and ice cubes, seal, and shake until outside of the shaker is chilled.

  2. Strain the cocktail into a champagne flute. Top up with rosé and garnish with a rhubarb shaving).

Rhubarb Syrup Directions


  1. In a small saucepan, add the rhubarb, water, and honey/maple syrup and bring to a simmer on medium heat.

  2. Simmer for 5 minutes until rhubarb is softened. Remove from heat.

  3. Using a strainer, strain the liquid from the mixture into a liquid measuring cup or bowl. Toss the leftover rhubarb or save for other recipes.

  4. Let the rhubarb syrup cool until room temperature. You can place in the fridge or freezer to quicken the cooling process.

  5. Store the leftover syrup to use for other recipes in a small jar and refrigerate.
