Triple Chocolate Peppermint Cookies

Ingredients
1 ¼ cups unsalted butter, room temperature
1 ½ cups granulated sugar
½ cup brown sugar
2 eggs, room temperature
2 teaspoons vanilla extract
1 teaspoon peppermint extract
¾ cup cocoa powder
½ teaspoon salt
1 teaspoon baking soda
2 ½ cups flour
1 cup dark chocolate chips
¾ cup white baking chocolate
3 candy canes, crushed
Directions
Preheat to 350°F and line 2 baking sheets with parchment paper.
In a large bowl, cream the butter and sugar. Add eggs, vanilla extract, and peppermint extract. Mix well.
Add the cocoa powder, salt, baking soda, and flour. Mix until just combined. Then, add the chocolate chips and mix into the dough.
Cover, and refrigerate for 30 minutes.
Using a cookie scoop, scoop the dough onto a cookie sheet, and ensure there’s enough room for them all to spread as they bake.
Bake for about 15 minutes or until edges are starting to get slightly crispy and the cookies slightly undercooked in the middle. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before placing them on a baking rack to cool.
In a microwave safe bowl, melt the white chocolate chips by microwaving for 20 seconds at a time, and stirring between. Once melted, use a spoon to drizzle the white chocolate over the cookies. Sprinkle the crushed candy canes over the cookies. Place in the freezer for 5 minutes to set.
Serve them right after or store them in an airtight container for up to 1 week.
