Easy and refreshing summer mocktail, this Virgin Watermelon Mojito is definitely a favourite!
If you've been following along for the last couple months, you know that I've been doing Friday Happy Hour for the summer. During this series, I've released a new cocktail recipe every single Friday since the beginning of June. It's been such a great time and let me tell you, everyone has been quite hydrated around here since then.
This is my first mocktail in this series and I'm so excited to share it! It's an easy, fruity, bright drink that's perfect for a summer afternoon.
Before we get into it, there are a couple alternations that you can make to this drink to suit your taste or time. You can sub the watermelon with watermelon juice if that's easier for you to get your hands on. You can also add 7-Up if you want to sweeten it up more OR you can add an ounce of white rum if you want to turn this into a cocktail.
Any way you choose to make it, enjoy it!
Ingredients
1 cup small watermelon cubes
10 mint leaves
1/2 lime, juiced
1/2 - 2/3 cup coconut water or milk (if you want it creamy)
1 teaspoon honey or maple syrup
1 small can club soda
Step 1: Let’s Get Started
In a cocktail shaker or mason jar, add the watermelon, mint leaves, and lime juice. Muddle the ingredients together until no big cubes of watermelon remain.
Step 2: Add the liquids
Add the coconut water/milk and honey/maple syrup. Then, add some ice, seal the lid on, and shake until mixture is cold.
Step 3: Enjoy!
In a tall mojito glass, add some ice and strain the mixture into the glass. Top up with the club soda and garnish with some mint leaves and a lime slice. Enjoy!
