I'm back with a new twist on one of my favourite family recipes: Indoor S'mores! I shared my mom's original recipe last year and it ended up being on of my most viral recipes of the year, and for good reason!
I've been enjoying the treat since my childhood and I've always loved it. They're so easy to make and have the perfect mixture of crunch, sweet marshmallows, and chocolaty goodness. An added bonus with this twist on the recipe, is that there's a spiced hint of cinnamon in this lovely little treat.
White Chocolate Cinnamon Indoor S'mores
Yield: 12 large pieces, or 20 small pieces
Prep time: 5 min
Cook time: 10 min
Ingredients
8 cups Cinnamon Toast Crunch cereal (approx. 1-13 oz box)
1 ½ cups white chocolate chips
6 cups mini marshmallows (1 bag)
5 tablespoons butter
¼ cup corn syrup
1 teaspoon vanilla extract
Directions
Melt butter in a large pot on medium heat. Add 5 cups of the marshmallows, leaving 1 cup aside, and melt.
Add chocolate chips, stirring to melt, and then add the corn syrup and stir to combine. Remove from heat and stir in the vanilla.
Add the cinnamon cereal and slightly combine, before adding the remaining marshmallows and fully stirring all together. The cereal doesn't have to be completely covered, just covered enough to stick together.
Press into a well buttered or non-stick 9x13" pan. The back of the spoon, if buttered, works well to press down.
Cool until firm and then cut into squares.
